Apricot and Coconut Curd

It's still summertime, what sounds better than making a delicious apricot and coconut curd? Our dried apricots are raw, vegan, and non-GMO. Great for on the go snacks or even better when paired with our apricot seeds. This recipe was made by one of our recipe contest winners, Hidemi Walsh. Check out more of her recipes!

Ingredients:

  • 12 pieces Dried apricots
  • 1/3 Granulated sugar
  • 1/2 cup Water
  • 4 tablespoons Coconut oil, melted
  • 2 large Egg yolks
  • 1 teaspoon Lemon juice

Directions:

  1. Chop dried apricots coarsely.
  2. Put water and sugar in a saucepan. Turn on the heat to medium and stir to dissolve sugar. Add apricots and stir to combine. Remove the saucepan from the stove and let cool.
  3. Transfer the mixture into a food processor or blender and puree until smooth.
  4. Transfer the mixture into a medium heatproof bowl and stir in lemon juice, coconut oil and egg yolks.
  5. Place the bowl over a pot of simmering water. Whisk until the mixture is thickened, like custard (about 10 minutes).
  6. Remove the bowl from the pot and let cool. Put the apricot and coconut curd into a clean jar with a lid and refrigerate.

You can use this for pie filling, toast, pancakes, with yogurt...anything you like.
